Raw Organic Chocolate

Life is good. And it's even better with chocolate.  Make your own organic chocolate at home.

Ingredients

  • 1 cup of raw cacao powder
  • 1 tbs. of raw maca powder
  • 1 tbs. of organic cinnamon powder
  • 1 tbs. vanilla bean powder
  • 1 tbs. cold-pressed coconut butter
  • ¼ of cup raw sweetener -- raw organic Honey, raw agave syrup, “B” grade maple Syrup, or raw coconut syrup
  • 1 cup of raw cacao butter
  • 1 cup of raw almonds or walnuts

Procedure

  • Preheat a Saladmaster 1-Quart saucepan over medium heat for 3 minutes. Then turn the heat source off.
  • Add the cacao butter. Cover and set aside. 
  • Allow the cacao butter to melt to liquid in the pan without heat.
  • Let it cool about 10 minutes
  • **If you are using other cookware other than Saladmaster semi vacuum cook at very low heat until it melts, then let it cool until it is cool to touch.
  • In a blender (I prefer Vita-Mix), blend for 45 seconds - 1 minute the melted cacao butter, cacao powder, maca poswer, coconut butter, raw sweetener, cinnamon, and vanilla bean powder until creamy.
  • Pour part of the mixture in the bottom of a 9" stanless round cake pan, add nuts ,and pour in the rest of the mixture.  If you'd prefer to use molds, I find them easier to fill using a pastry bag.
  • Set in the freezer for 5 - 10 minutes until firm, then place in the refrigerator. Chocolate will stay fresh for up to one month.

Health Benefits of Raw Cacao

The medicinal value of cacao and its ability to treat weak patients with a variety of disease dates back to the early 1500s.  Cacao was particularly known to improve digestion and bowel funtion, stimulate the kidneys, and help anemia, fatigue, fever, low sex drive, respiratory troubles, poor appetite, and low breast milk production.  In addition to the cacao bean, the oil/butter was used in the treatment of skin problems including eczema, psoriasis and burns. 

Cacao in its raw form contains Anandamide (a euphoric substance), Arginine (a natural aphrodisiac), Tryptophan an enzyme that helps in the aid of increasing serotonin levels in the brain (an anti-depressant).  

955 ORAC (Oxygen Radical Absorbance Capacity) units are in each gram of Raw Organic Cacao Powder.  ORAC is a high-tech way of measuring the ability of antioxidants to absorb cell damaging, wrinkle-causing, tissue destructive free radicals. The antioxidants and other beneficial compounds known to have rejuvenating and anti-aging elements found in Cacao are the main reason why it's scientific name is  "Theobroma," which means “food of the gods.” In the Mayan cultures, the cacao beans was revered as a valuable commodity used as currency. Warriors would drink 60 cups of pure cacao before battle for endurance, nourishment, and strength.
